Thanks Michael, not entirely clear what you mean though. If I create additional connectors there doesn't seem an easy way to say "my entire LAN" without the Exchange 2003 servers also using the new connectors as they are a closer IP match than the "default <server>" connector.

Our Exchange 2010 box has the default receive connectors of Client and Default. For now we also have our Exchange 2003 servers though they are to be decommissioned once everything has been migrated. We have a DMZ email gateway that passes inbound mail through to the Exchange 2010 box, and like most places we have a bunch of copiers/mfp's on the LAN as well as other assorted apps and "things" that need to talk SMTP to our Exchange boxes to send mail to internal users. Best practise is supposed to be to leave the default connectors untouched. Do that and you need to create a connector to handle anonymous connections. If you create a connector that only handles anonymous connections from your LAN subnet/IP range and it appears that all your Exchange 2003 to Exchange 2010 traffic uses that connector as it's a "closer match" based on IP restrictions than the default connector. However, because your Exchange 2003 server is now connecting anonymously it is subject to some limitations that affect things like public folder content conversion. So, given the above requirements, which I think are pretty basic tbh, how would you configure your additional connectors? Could I just create a connector with the same settings on all the tabs that are on the "Default <server>" connector, but also tick the "Anonymous" option?
