OK so far so good.  Walked in this morning to some errors - seems my OAB had 
randomly set the generation server name to "Public Folder Database" rather than 
the name of the 2010 server (which it has been for weeks).

So I changed that, regenerated OAB, restarted FDS which then bitched about 
missing group metrics and sure enough my 
\\server\groupmetrics<file:///\\server\groupmetrics> share, which was there, 
had mysteriously disappeared.  Restarting the Exchange Host Service recreated 
that though.

Are these little niggles normal/expected?!  The old boxes are still switched 
off.

Make a good backup, it's the uninstall of Exchange that actually removes the 
appropriate AD settings...just follow the the documentation...

Even if you uninstall your Exchange, the edbs and logs stay in that directory, 
so it is possible to recover if necessary...

I'd appreciate a bit of a sanity check please.

I've gone through all the steps that I know of to de-configure my Exchange 2003 
servers prior to removing them.

I've not yet removed the mailbox databases and Public Folder database though 
they are empty (no mailboxes, no PF instances).

I was planning next on shutting down the 2 old servers (FE and BE) for a few 
days to ensure nothing breaks, then bring them back up, remove the RGC's and 
uninstall - sound sensible?

Also, prior to doing this should I follow the steps in this article:

I'm a bit unclear if there are any implications with doing this whilst the 2003 
servers still have their PF databases.
