If the server is running, you basically have to get "everything off of it". You can run setup a gazillion times and it'll tell you, one item at a time, what has to be cleaned up.

Then install Exchange using the recover server switch from the command line. Once complete, remove Exchange correctly using add/remove programs. You can use a virtual machine to do this, and that way it can be done in less than an hour. That is the only supported method to remove Exchange 2010. Manual removal, such as using adsiedit is not supported and could easily cause your existing machine to become non-operational.
