I'd remove the servers from the load balancing solution during a quiet time to limit the amount of clients - and therefore potential helpdesk calls - that will fail over if the CAS they're connected to disappears from under their feet. I normally do this the night before.
Also, if you have applied any custom OWA graphics etc, you'll need to re-apply those after the RU has completed. Otherwise, no special instructions.
