That's an easy one: deploy it when you feel that your own testing is completed, and/or you have appropriate recovery procedures in place should the worst happen.
For me, I'm going to deploy it on a single server basic installation, and build a full Exchange test site based on 2010 SP1 where SP2 will be the first to get the testing treatment.
