I don't know Unity per-se but haven't had much issues with CUCM and various update rollups. Does Unity plug into anything else other than UM?
The SP in general is pretty reliable. It is only recently that I am adding the Update Rollup on new deployments. If you can run the UR in a test lab against a test Unity environment, great.. But also if it is interacting with UM (for example) you could test against one UM server before patching the other. Any problems, you can uninstall an UR.
