I have added the extra account from within Outlook, but....I can't seem
to set Exchange mail to be delivered to mailbox and pop3/smtp email to
be delivered to PST. It's either mailbox or PST for both.

The reply bit will be were the confusion will be.

 

Back to fiddling with settings!

In a word, yes.  Just add the POP/IMAP account to the Outlook profile
that already exists and specify where incoming mail is supposed to go.

 

IIRC, where you're going to experience some occasional pain is in
sending new e-mails.  The person at the keyboard will have to remember
to make sure the correct account is chosen each time they want to send
from the non-default account.  I think replies go from the correct
account automatically.

 

In any case, it's do-able.  Just play around with the settings and
behaviors until you get it exactly how you want and understand how it
works.
