I run Exim in production with a normal build.  There are no signs of a
"stack overflow".
So at first sight whatever this compiler switch is doing is bogus.
Certainly the lack of detail on what and where it tripped is unhelpful.

Documentation for this #define seems hard to find.
You could try setting up for setuid-coredumps, to try to get
a stacktrace.

I do note that https://man7.org/linux/man-pages/man7/feature_test_macros.7.html
says "some conforming programs might fail".
