I'm running ClamAV and SpamAssassin (no learning/bayes stuff) for 50k users split up among three servers (dual xeon 2.4, 2gb ram) and they process/block lots of email (not sure of the messages/day though). I've seen load come close to a 1.0 at peak hours but that's about it. My configs have quite a bit of ACL work too - a few db files to check each time, some plain text white/black list files, etc...
