go for the two that all RFC compliant messages MUST have: Date: and
From:
I have this in my configuration:
# Check to see that the RFC 2822 required headers are present.
deny message = message is missing headers required by RFC 2822
condition = ${if or{{!def:h_Date:}{!def:h_From:}}}
