You'll need to provide examples of emails that 'work' and ones that don't. Its very unlikely, though, that a default install of Exim would cause content problems - unless it has been configured with a filter that deliberately messes with things, that is. Please also provide the Exim config and log files showing the delivery of a message that you're concerned about.
