That VAR is a variable that is passed to it by YOUR browser.  So if you
put an entry in /etc/hosts such as:

<yourinternalserverip>    something.ridiculous.com

Then point your browser to http://something.ridiculous.com, it will say
"Welcome to something.ridiculous.com".  When you turn off that
UseCanonicalName setting, you are telling the server "use whatever name
the client gives to me as my name".
