There are lots of video capture software for doing tutorials and training. For about the last year I've been making training tutorials for my clients using a program called ScreenFlow by Vara Software (http://www.varasoftware.com/ ), however it's for Macs only. PCs also have a wide variety of options (just Google around and use what works best for you).
