Yeah, but you miss out on the awesomeness of the tag and how it can be used in different scenarios.
Can it be done? You bet! The only difference would be that the tag would need some kind of boolean that tells it not to put the final result in the <head/> block, but rather a variable. Then you'd just have to make sure to output that variable before your </body> tag.
