I build them manually.  99% of the time I do them as a rule.  I don't always 
offer customizable options with the rule (just launch it and go), but if the 
form sends out an email to staff I will usually make the [to, from, bcc, 
subject, "Thank you page" content, etc] fields customizable in the rule.

Within the forms I like to standardize on how to manage things like validation 
and stuff for that entire site both through front-end validation (jQuery) and 
backend validation (as a backup plan).

For the most part, I haven't used includeObj since FarCry 3 (except in rare 
cases).  I do use include webskins for displayTypeBody templates, but that's 
unrelated to forms.
