In the mid-term, this values will go into a /etc/sysconfig file, but that probably needs a little bit patching. Regarding 3, as with any other web application, there is a need for a initial administrative account. Harcoding a fixed password is just a little bit better than leaving blank. But any suggestion is very wellcomed. Asking for the admin password on %post looks to me a bit ugly, despite the fact that might interfere with yum based installs.
