One of the hardest things to do as a public speaker is not speaking (:
The times when you have to pause and remember where you are, just let
there be dead air.  Nobody is going to care.  It's darn hard to do, and
I'm still bad at it, but if you can pull it off, you'll sound like the
best speaker evar!

Seriously, pauses lets the audience catch up, lets you catch up, and
inserts some fun drama into your talk.  It's good stuff.
