If you preserve the git hash of the checkout you used (for
reproducibility's sake), you could skip packaging the source by making
it a "nosrc" package. This used to be done quite often for stuff where
the source was undistributable, but you still wanted to provide a
src.rpm with all the other sources (i.e. mainly patches) in a bundle. I
think nowadays, lpf provides a somewhat different approach - but
perhaps only for Fedora, and pretty buggy IMO.

E.g. to omit %SOURCE7 from src.rpm:
NoSource: 7
