I've heard it argued that the reason opera singers use--and get away
with--such big vibratos is so they can be heard over an orchestra.  Unless
someone can provide me with evidence to the contrary--preferably
experimental--the thought of vibrato increasing volume strikes me as so
much piffle! ...

Depends on the opera, of course. You won't hear much vibrato in recent Handel performances!

So make that "...a *large* orchestra." My own sense of the matter is not that vibrato increases volume, but that some degree of vibrato is necessary if a high vocal volume level is to be sustained for a long time w. minimum strain. Vocal vibrato involves a give-and-take among various throat muscles, and I can well imagine that this might be easier to keep up than a single, set level of tension.
