We are looking for a way to show string players that a long line should not have an audible break between bows WHERE WE DEEM IT NECESSARY.

I always write a great big single slur together with the instruction "change bow imperceptibly"--a common enough instruction, IMO. Actually, I usually do this with a very long series of ties, if I'm not sure the whole thing can be executed in a single bow.
At the other extreme, I like an effect that I've not seen in other composers' work, which is to write long, slow notes and add the instruction "change bow freely, with a slight accent"--that is, each player introducing independent, random accents into an otherwise legato flow. The plain instruction "change bow freely" is common enough in loud passages, but I've not seen anyone ask for these changes to be emphasized.
