In jazz/blues charts, the major (or minor) key signature is always used. If you are talking about a piece to be played by a standard jazz-type of ensemble, players would be confused if you used a modal key sig. because it would seem to them that you want the piece to be in G, but they would immediately realize that D is tonic, and would just wonder about who in the world did this arrangement...
