I can only guess, but I think previously the preview was using font information (which is possible afaik in PICTs) whereas now it is a simple 72 dpi bitmap. I have a feeling the new way is actually more standard.
They should look ok at 100% on screen. If it really bothers you you may be able to use another app to make better previews. I have just tried this with MacGhostView, seems to work. I guess ideally Finale should allow to set the preview resolution, but as it stands I am glad EPS works at all.
