After digging a little further, I noticed that there's a subordinate dialogue box below this one called "Tie Contour." Click on this, and you find there's a check box called "Use Tie End Style." I currently have this checked. The friendly manual says that this is for compatibility with older versions of Finale, and new documents should have it unchecked. However, de-selecting it did not produce any apparent difference.

One point worth noting as an aside: You would expect Finale to use some of the same code to implement ties and slurs, since they are similar. However, slurs continued across a system break are generally acceptable, while tie ends are generally not.
