I'm using a version which is very old now, so I don't know if this still applies....
But when I make PDFs by way of Finale's "Compile Postscript Listing" I also get colors. My solution is simply to go to the option where I can turn off display colors. Then when it's black and white on screen I can make a b&w PS file, and then I switch the display colors back on while it's done.
