You mean you're working on something like a baroque score, and you want everything to look the same but playback a half tone lower? I haven't done this, but I would suggest transposing the whole thing down a half step and then changing all of your staff transpositions to put things back up a half step. So flute, for example, would become a transposing instrument in B, and a written C would play back as a B.
