uncheck "use percussion noteheads" in the staff setup (cmd-K to call 
up the dialogue)

there is *very* often no real need for "alternate" noteheads, when 
the instruments are being played in "normal" ways.  for example, 
cymbals played normally (sticks, mallets, triangle beaters, 
brushes...) do NOT need X-noteheads.  exceptions exist, of course, 
e.g., highly standardized situations like drumset notation.  but in 
particular, if the cymbals are on a dedicated staff (1-line or 
multi-cymbals/metals) the noteheads used should be "normal".
