As for KDE, open Terminal.App, type "startkde", and hit return. I have it as /sw/bin/startkde. I don't know about GNOME, but I GUESS it works in a similar way.

Also how do I get the full list of packages available? Eg. Eggdrop,
proftpd

full list of WHAT packages? of Fink? or of KDE, or GNOME? if your question is about the former, check out:

if not, "dpkg -S <package name>" might help you. see "man dpkg" for relevant detail.
