This should be fine--Fink is set up such that packages you build will work on any Mac (except for packages that specifically won't work on a G3).
One issue. Some packages have an affect on the system so this method is NOT 100%. I have not found a list of these packages, but it seems to be relatively short. The one I know for sure is "passwd".
But this can be easily dealt with by doing a reinstall. { Example: fink reinstall passwd}

passwd and daemonic both do things outside the Fink tree, as well as xfree86.
