One possibility is that Fink is pointing at the wrong distribution, e.g. 10.2-gcc3.3. Check this out by looking at /sw/etc/fink.conf. If indeed the Distribution: line doesn't say "10.4-transitional", then if you run /sw/lib/fink/postinstall.pl in a terminal window, that should do it. On the other hand, it's also not impossible that the packages you're looking at haven't been updated in the stable tree.
