You'll have to use the command line however you do it.

For Fink the step-by-step instructions pretty much are:

0) Install Fink.
1) Install the XCode Tools.
2) OPTIONAL:  install the X11User and X11SDK packages from Apple.
3) Run "fink selfupdate" at the command line to make sure you have
current package descriptions--some stuff will get built.
4) run "fink install bundle-gnome"
5) Check out the instructions on how to set up the .xinitrc (X11
preferences) file at

This link includes an example of how to run GNOME.

These are the "official" options.  Currently we don't have an Intel
binary distribution built yet, but unofficial repositories do exist:
