Is it possible that when "a new mirror site was added", you ran (or fink 
ran for you) "fink configure"? In the latest versions of fink, this asks 
you among other things  whether you want to activate the unstable tree 
or keep it activated. Perhaps you gave the wrong answer and it 
desactivated unstable. You could run "fink configure" again. For better 
control about what happens, you might prefer to run it outside of 
FinkCommander, in a Terminal window.
