Try the following:

cp /sw/fink/dists/unstable/main/finkinfo/sci/gnuplot.info \ /sw/fink/ 
dists/unstable/main/finkinfo/sci/gnuplot.patch \
/sw/fink/dists/local/main/finkinfo

(You may need to create local/main/finkinfo, and you may need to  
preface the command with "sudo")

Then update gnuplot.
Since the stable and unstable versions were in sync until relatively  
recently, I don't think there should be any blocking issues with the  
dependencies.
