You don't (at least until we need a newer one). If you look at the page you referenced, there are no entries. This indicates that zlib is unavailable for any currently supported OS version. We discontinued providing a zlib package when an appropriate version was available in OS X, which I think was about 10.3 or so. If you've got a project that needs zlib, have it link against the system's libz.
