Nothing in this output indicates that X11 is not running. Don't you see 
the xterm window that was created?

No, there isn't any fink-based X11 for MacOSX 10.5 or later.
How long did you wait? If I remember correctly, at the first start of 
gimp, there may be some font cache building going on which can take up 
to a couple of minutes. Afterwards it will start faster.

If anything untoward is going on, you should see it mentioned in the 
console output (/Applications/Utilities/Console.app). Watch out for 
recent crash logs, also in Console.
