So what happens if you have both fink and non-fink headers/libraries
installed? Do the non-fink ones effectively cease to exist? I'm sure there's
a lot of people out there like me who, for whatever reason, have a mixture
of both.
No, this is a build-time operation restricted to compliling Fink packages--the idea is to make sure that Fink doesn't unwittingly link in headers and libraries that come from outside. Everything would still function normally for all other operations.
