This confirms my theory: In stable, there is version 7.04-1 which has dependencies on libpng, whereas in unstable there is version 7.04-2 with dependencies on libpng3. The first is what you got, and it works, the second is what I am getting (having unstable enabled), and it doesn't.

When I build explicitly ghostscript-7.04-1, then libpng is recognized in configure.
