One builds against gnutls, the other builds against OpenSSl. This only
affects how the packages aquires its TLS implementation. It does not
affect the ability to send mail.

It is just a matter of taste what you want. usually you will have
openssl already installed and thus the variant is being offered. I hope
that clears things up for you.

There is no explicit msmtp-gnutls because the functionality remains the
same, no matter which variant you build.
