If your Fink setup is correct you should
0) start X11 (whichever flavor you're using)
1) open an X11 terminal window or

for what to do if you want to use an OS X Terminal window
2) Run gnucash by typing
gnucash
in the terminal window (not all packages include applications with the
same name as themselves, but many do)
It _is_ "Linux 101", but OS X is NOT Linux!
(So it's really Unix 101).
If you'd like to have GnuCash launch from the application bar
'Mac-style', you can use this:
