No. As far as I can see, they only distribute precompiled binaries for Linux. While Fink can help making some Linux software run on the Mac by porting and recompiling the sources of that software, it cannot change the fact that the underlying operating system is Mac OS X and not Linux. The rpms and debs they distribute will only run on Linux, not on Mac OS X.
