fink doesn't support any modification to "update-all". The easiest way to work around the issue while you're waiting for a fix for gdb is to use "fink remove gdb" and then "sudo dpkg -i /sw/fink/debs/gdb_7.1-2_darwin-i386.deb" to restore your current version, assuming that you still have the .deb file.
