The issue is that webkit's build process lazily assumes that the deprecated symlink /usr/include/X11 -> /usr/X11/include/X11 exists. This is no longer the case for Xquartz 2.7.x, so the package is broken on 10.8.
It needs to be fixed, yes, but the official fix is very likely going to be something along the lines of what Peter suggested. You're not going to be forking anything if you decide to do it yourself rather than waiting.
