You edit those strings in the tooltips for the item.
In the nib file, select the item that has the tooltip you want to edit.
Go to the inspector and go to the inspector named "Help" - hit Cmd-4
when you have the UI item selected. The tooltip is in the tooltip
field at the top of the inspector.
