There are several Microsoft Technet articles about the ports that are needed. I don't remember them all so you might want to check the advanced search page for Microsoft support. But if the Exchanger server has the protocols installed couldn't the user use a SMTP or POP client? or even OWA? This way you might not have to open up any more ports.
