Sure, it'll talk SMTP and is pretty easy to set up in a gateway mode.  As 
a bonus you can add quite a bit of anti-spam filtering.  Postfix is 
currently my favorite MTA, with qmail running a close second.  Either (or 
indeed Exim as a third choice) make a good "proxy" for SMTP destined to/from 
Exchange.  Postfix has an added advantage of being blazingly fast to send 
mail, but never overloading any downstream mailer, so even if you have a 
slow Exchange box, you needn't worry about it being overloaded by Postfix.
