you can't, unless you're using an application level proxy. telnet just
sets up a TCP connection.

You can suppress displaying some user info by placing the following
into your sendmail.mc and rebuilding sendmail.cf:
dnl Privacy Options (34.8.47)
define(`confPRIVACY_FLAGS',
`novrfy, noexpn, needmailhelo, restrictmailq, restrictqrun,
needexpnhelo, needvrfyhelo')
the novrfy and the noexpn will go a long way to hide some user info.
You may wish to examine 34.8.47 of the book, "sendmail", for more
information.
in a nutshell, not really worth fearing.
