since you're using slackware ... i'll reply...
you can/should be using oyur firewall to play director...
- all port 25 connections goes to the mail server...
- all incoming port 80 connections go to the web server etc
- ... etc ...
- or you can change your MX records in your dns files
MX 10 new_ip# for the new mail server
MX 20 old_ip# for the old mail server
