First of all Spaming and relaying are different.

Spaming
-------
Spaming is flooding the Internet with many copies of the same message. SPAM
costs the sender very little to send, most of the costs are paid of by the
ISP and the receiver as it chew up the bandwidth and can even cause the mail
servers to perform sluggishly or stop performing. Mail filtering in the Mail
Transfer Agent (MTA) is the only practical solution today for removing SPAM
messages.

According my personnel experience
 - Virus Wall with eManager from Trend Micro provide a good spam filtration
 - If u are using Netscape mailing solution - UBE filters can provide some
functionality of blocking mails which can be classified to be a spam mail
 - Or another alternative is to get subscribed to RBL filters.

Even though ur question was not on relaying..
Relaying
--------
Relaying is using a mail server to send mails to Internet using smtp
protocol. If used by unauthorized users will cause chewing ur machines cpu,
ram and the bandwidth.
To block unauthorized use of mail servers for relaying, put appropriate rule
in the mailing system application to ensure that messages are processed by
the SMTP gateway only if the messages are originating or terminating to/at
ur domain name. Further to the same, ensure that user need to be
authenticated before any mails are allowed out to block the relaying to
greater extent.

Block your mail relay.
If you are using relay in your mail server then anyone can send the
mails by using your mail server IP.
So select "no mail relay"
