Here's a link to an old traditional Shetland recipe for "Reestit Mutton". Its really good and a must have in any Shetland home at New Year! It is usually eaten as "tattie soup" with "Bannocks" cut in half with butter and the meat inside. The mutton is usually cured over a peat fire, but this is not so common nowadays. It will keep for ages once its dried.
