FVD is still a good survey text -- not sure if there is one definitive
book as the field is so large. De Boor's 'A Practical Guide to
Splines', Bartels, Beatty, and Barsky 'An Introduction to Splines for
Use in Computer Graphics and Geometric Modeling' and Farin's 'Curves and
Surfaces for Computer Aided Geometric Design' are a nice trio to have.
