I know this was asked a long time ago, but somehow I must have missed it.  Either that or I learned how to do it later.  In any case, do this:

  import flash.ui.ContextMenu;
  var menu:ContextMenu = new ContextMenu();
  menu.hideBuiltInItems();
  contextMenu = menu;
